Absinthe is a cheeky name in French

This French restaurant Absinthe, is unpretentious, unlike some other French restaurant, no need to wear posh attire to be there, just be causal smart.
Absinthe is a cheeky name in French, is apt for a restaurant & alcohol drink.
The alcohol level range from 53 % to 74%. 

Pau, the partner of the restaurant shared about how the name Absinthe came about. They wanted to called the restaurant as Francois but when they mention the restaurant is named after the chef, then everyone said, there will be no more meat on the bone. Absinthe is derived by a strong desire group who wanted to bring the best French Food to Singapore. Initially it was supposed to be called La Belle Époque, like the champagne. It was based on the era after the 19th century when they have the list of impressionist painters and the restaurant is going to showcase the champagne at the same time. However, it did not work out in the end. The partners felt that the name Absinthe has a good balance between imagination, class and cheekiness depending on what you think of when you think of Absinthe.

Chef Pierre decides the menu together with the team. The menu feature cuisine from the southwest in France. The dishes are lined up and many time it's not tasted before. The wines are reasonably priced, there are many other countries wine than France.

The texture is creamy but not too rich. 



After dessert, usually you would like to try the Absinthe Morand. The way Absinthe prepare is very interesting. There are about 19 different varieties of Absinthe. The alcohol level range from 53 % to 74%. In Absinthe, they have the lowest alcohol content with the delicate taste of Anise spices. 
There are various ways to serve Absinthe, in Absinthe served it in the traditional French manner. A glass fountain filled with ice cubes and water is the main apparatus, placed a glass at the faucets and put a spoon above the glasses and places a sugar cube on each spoon. They turned on the faucets and slowly the ice water dripped on the sugar cube, melting them into the glasses. This continued until the sugar dissolved. When it's done, the Absinthe became an opaque milky white colour. 
Sip and savor it slowly, Absinthe has a distinctive taste that not everyone will enjoy. However, it is something worth trying.

Tonny Restaurant 利宝饭店(Cantonese Cuisine)

For 30 years in Singapore, Tonny. restaurant has a traditional image but the chef Tonny introduced sophisticated and contemporary dishes suitable for young and elderly people. "Today, more than ever, people like to eat different type of creative dishes."
Tonny says, I am a creative person, I like to cook dishes that's different from others.

Crispy Yam with Truffle Oil,  Tonny explained he has spent a lot of time to get this Crispy Yam with Truffle oil right, The yam is thin grated and deep fried, he will pour the truffle oil just before service. It's a pleasing appetiser. All ages love this dish.

Crouching Tiger Hidden Dragon. Make of fresh scallop, fish roe wrapped up by a crispy wanton skin. 

Double Boiled Shark's Head Soup with chinese wine, very tasty soup without MSG.

Braised Crocodile Fin with Abalone Sauce,  when you chew on, it's like maw soft and tender. It has very high collagen. 

Indulge in the crab porridge, the salted eggs enhanced the flavour. The freshness of the crab was further enhanced the smooth taste of the porridge.

Pan Fried Pumpkin Cake, this is another dessert Tonny has created with pumpkin and sesame. You can taste the authentic way of pancake.

Chef Anson:- Prawn's Head is the Best Part"

Nadaman was established since1830 in Japan, specialized in fine Kaiseki dishes, the famous Nadaman group of restaurants has been treating discerning diners in Japan to fine traditional cuisine.

*The Appetizer, I thought it's quite special, the Milk Tofu with wasabi sauce, the squid with spring cabbage and seaweed in vinegar miso sauce.

Deep-Fried Prawn, Teriyaki sauce, the chef suggests, "must try" to eat the prawn legs, put the whole piece of prawn legs into your mouth, chew slowly to get the taste and swallow.

Wagyu Beef $180, Pan-fried Japanese sirloin beef, wiry teriyaki and vegetable, served with radish vinegar soy sauce and pickles garlic.

Bondi Beach, Sydney @Australia.

Bondi Beach, one of Australia's most famous beaches, in Sydney.
The beach is very nice, golden sands, turquoise waters and perfect waves make Bondi Beach an iconic Sydney attraction, even the "Modern Family" came here to film their movie. 

There is plenty to do beyond the surf. dinning, shopping, coastal walks. Bondi has a mix of classic Italian and Australian dishes. Take in a long, lazy lunch and enjoy a tasty coffee & food here.

My favourite place is Icebergs Terrace Cafe ( see below picture) with its second story site hovering above the ocean pool, 
I would recommend sitting in the balcony, the location is great overlooking Bondi beach crashing waves and the Iceberg club swimming pool. Seafood is their signature of the menu, the pasta and mussels is nice too. We enjoyed the view over Bondi beach on a gorgeous afternoon watching the sun set with a wine in hand. The price can be expensive, food and wine almost $150-$250 for 2 people, the service is also outstanding they offered to call a cab for us. 

There is also a fine dinning Icebergs Bar, Resturant, dinning room, offers cushions that invite guests to relax and enjoy, The ambient light is fairly low, it's hard to read the menu. However it's definitely a place you want to check out!
